23 Easy Low FODMAP Potato Recipes: Which One Will You Try First?

Potatoes! White, red, yellow, starchy russet, sweet potatoes – even blue and purple potatoes – can be a main meal in the form of double stuffed baked potatoes, a weekday side-dish, a potluck salad, or they can add richness to soups. And don’t forget breakfast casseroles and home fries! We have 23 recipes for you to try and potatoes are often economical, too, so dive in!

Fully Loaded Stuffed Potato Skins

You can’t go wrong with potatoes, bacon, cheese and all the fixings! You want smaller starchy potatoes for this recipe, and it works best if they are all similar in size. Homemade Blue Cheese Dip and Ranch Dressing offer the perfect accompaniments for dipping – but don’t overlook the salsa as a condiment!

Hasselback Potatoes

Hasselback Potatoes are crispy on the outside, creamy on the inside, simple to make and go with many different mains. Our version uses Garlic-Infused Oil, butter and fresh thyme. The name, by the way, hails from a classic Swedish preparation. They look kind of fancy, but the technique is actually very easy. The potatoes are sliced 1/8-inch (3 mm) thick crosswise, but not all the way through. This allows the potatoes to fan out a little but, exposing the flesh to the high heat.

Smoked Trout Nicoise Salad with Purple Potatoes

Sounds fancy, doesn’t it? But the smoked trout is a purchased product, and the rest of the salad is easy to make. It is quickly assembled, after you have made the jammy hard-boiled eggs, boiled the potatoes and beans and made the salad dressing. This colorful composed salad is perfect for a warm weather main dish.

Root Vegetable Tian

Our Root Vegetable Tian combines potatoes and parsnips, beets and sweet potatoes. Sliced thinly, arranged in a baking dish, drizzled with extra-virgin oil, sprinkled with salt, pepper, dried thyme and a little Parmesan (or left out to make the dish vegan), this spectacular side-dish will enhance your weekday roast chicken – or make for a holiday meal or festive get-together.

Hash Brown Potatoes

The key to making crispy hash browns is simply patience. Once you put the potatoes in the pan, wait before you move them around. You want a nice crust to form on the bottom before you flip them. You need a heavy 10-inch (25 cm) skillet for this recipe; we like using cast iron. Hash Browns are the quintessential breakfast or brunch potato dish, but they are also great alongside your dinner proteins. We added chunks of ham to the serving shown.

Berbere Spiced Mashed Potatoes, Parsnips & Carrots

Our version of a Berbere spice blend is a combo of coriander, black pepper, cardamom, allspice berries, cloves, ground chile, paprika, fenugreek, cinnamon, ginger and nutmeg. It is incredibly flavorful and while we love it with chicken, it is equally fantastic with this vegetable mash of potatoes, carrots and parsnips. Plus, you can make the spice blend and have it around for other uses – we have even used it to spruce up scrambled eggs!

Potato Salad with Hardboiled Eggs

This is the classic, old-fashioned potato salad found at so many church events and potlucks – potato salad made extra creamy with hard boiled eggs, a tangy yet creamy mayonnaise-based dressing, and a little crunch from celery. The hard-boiled eggs add flavor, texture and extra protein!

Mashed Sweet Potatoes with Candied Spiced Pecans

Super smooth and satisfying Mashed Sweet Potatoes with Candied Spiced Pecans! The sweetness from the rich orange sweet potatoes, and crunch from candied pecans spiced with ground cinnamon and ginger create the perfect savory, yet sweet, side dish. Great with turkey, but we also enjoy this dish year-round.

Sweet Potato Tacos with Black Beans

Our Low FODMAP Sweet Potato Tacos with Black Beans are a perfect vegetarian dinner packed with flavor, texture and color! Just look at the images. Even meat eaters go crazy for these – and when you drizzle with the Avocado Lime Crema? You’ll be in Tex-Mex heaven. And if you use a vegan yogurt for the crema, they are easily made vegan!

Potato Eggplant Curry

Our Low FODMAP Potato Eggplant Curry is an easy-to-make dish that you can tailor to your desired heat level. Along with the two main vegetables it also features tomatoes, mustard seed, cumin, coriander, fresh ginger and cayenne.

Fish Chowder

This dictionary’s definition of chowder is “a dish consisting of fresh fish, clams etc. stewed with vegetables, often in milk”. We also have a New England style Clam Chowder for you, but this one is all about fish. Any mild white fish works. Haddock will retain its shape a bit better than cod, but as you can see, I went bargain shopping and my chowder was fantastic!

Home Fries

We think the best Home Fries start with starchy potatoes, like russets. They will create that creamy interior and crusty exterior that we look for in a great home fries’ dish. Parboiling the potatoes first until a bit tender, but still firm and not fully cooked, also helps achieve the desired end result. You can peel the potatoes, or keep the peel on, or kind of do a combo approach.

Air-Fryer Gluten-Free Fish Sticks

Do you think fish sticks only come in a box from the supermarket freezer aisle? Our Air-Fryer Gluten-Free Fish Sticks are going to be an eye-opener! You do need an air fryer for this recipe, but we know many of you do have this appliance and have been asking for recipes. These fish sticks are coated with crushed potato chips! It doesn’t get crunchier or more delectable than that. Perfect with Tartar Sauce. All in less than 30 minutes!

Smashed Potatoes

I did say crispy SMASHED Potatoes, not mashed potatoes! Don’t know what smashed potatoes are? They’re smashed, they are crispy on the outside and creamy inside. EVERYTHING you want from a potato! Baked on a sheet pan in a high heat oven.

The Best Oven-Baked Fries

If you love fries and want less fat, oven fries are the way to go. They are easy to make, if you follow some simple rules. We have a foolproof recipe – and many tell us that they never go back to fried; they are that good. Crisp on the outside and tender in the middle. Perfect for ketchup dipping, or maybe in malt vinegar!

Do-Ahead Mashed Potatoes for a Crowd

We like potatoes any which way we can get them: steamed, boiled, fried, oven roasted and mashed, as we have here. Mashed potatoes are an oft-requested side dish during the holidays, be it Thanksgiving or Christmas or other large celebratory meal. Make this recipe when roasting that Standing Rib Roast, Turkey or Ham – and don’t forget the low FODMAP Gravy!

Classic Potato Gratin

Here it is in all of its dairy-rich, starchy glory. Potato gratin often includes garlic; ours does not, but you won’t miss it, especially if you include the optional thyme and nutmeg, which we think add a very nice touch.

Vegan Garlic Mashed Potatoes

This vegan mashed potato recipe is light, due to the lack of dairy – there isn’t even any alt dairy! And it is simple. The starchy cooking water from your Russet potatoes is filled with flavor and body. Instead of throwing it out after draining the potatoes, you use this liquid to help loosen the mashed potatoes, as you mash them. It actually makes them creamy!

Chicken, Cheese & Broccoli Twice-Baked Stuffed Potatoes

These over-stuffed potatoes are perfect for a light meal, dinner or lunch, served alongside a big green salad with a nice sharp vinaigrette. You do need cooked chicken, and if you haven’t gotten into the habit of roasting a whole chicken every week to have on hand, we encourage you to do so.

Mashed Potatoes with Sour Cream & Chives

These Mashed Potatoes with Sour Cream & Chives are an indulgent, yet tummy friendly, side dish with lactose-free sour cream and chives. There is no butter in this recipe. You could add some, if you like, but I like leaving it out so that the pure sour cream flavor can shine through.

Vegetable Latkes

If you are looking for classic potato latkes, we’ve got ‘em! These Vegetable Latkes, as you can see in the colorful images, are a little different. Each one is a 50/50 blend of starchy russet potatoes and either (left to right in image) zucchini, carrots or beets.

Breakfast Casserole

This Breakfast Casserole combines frozen hash brown potatoes, eggs, cheese and ham for an all-in-one, protein packed, low FODMAP breakfast or brunch dish that can be put together in less time than it takes to preheat the oven.

Hash is simply a “hash-up” of meat, potatoes and simple seasoning. It is a homey, comfort food. Got some leftover roast beef? Want a super-fast dinner or brunch? This recipe for Roast Beef Hash is so easy, that after you make it once, you won’t need the recipe again.
